Crispy Cheese Eggplant 香脆芝士茄子

It has been a while I felt tired and lazy therefore I didn’t update my blog.  Today want to introduce this recipe, it taste pretty good and my family love it very much. Hope you all also will like it.

Crispy Cheese Eggplant

Batter(Sifted together)
80g plain flour
50g rice flour
1/2 tsp salt
1tbsp corn flour
1tbsp custard powder
1/4 tsp baking powder

120g water
1 tbsp margarine
some mint leaves, chopped(can omit)

2 eggplants(about 200g) cut into 1cm thick slices
4-5 piece cheddar cheese, cut into small pieces(about the size of sliced eggplant)


1.Batter: Put ingredients into a mixing bowl. Pour in water slowly and mix well.  Add in margarine, mint leaves and stir into a smooth batter.
2. Sandwich cheese into 2 slices of eggplant.  Coat with batter and deep-fry in hot oil until golden brown.
Put the crispy cheese eggplant onto kitchen towel to get rid the oil.
Serve Hot
