Butter Skin Moon Cake奶油月饼

3 more weeks is the coming of Mid-Auturm Festival.  Have you started to make your very own cute moon cake?  If you do not know how to make, don’t worry, I am going to show you all, a few different kind of mooncake recipes with some step by step guide.

The following is the moon cake I have made few days ago.  It tastes like cookies when you eat on the day you bake, the skin is very crispy but of course on the next day, the skin become soft.

For this recipe I have used the Doraemon Mould as the Moon cake mould. This is my first time to use cartoon character mould to make moon cake, hopefully it does not looks ugly.

 

This recipe can make approx. 20 mini doraemon moon cake
Ingredient:
90g plain flour
25g custard powder
35g icing sugar
50g margarine
25ml milk
1 tsp Lime juice
1/4 tsp vanilla essence

Filling
400g lotus paste(store bought)
10g melon seeds(toasted)

Method
1.Mix lotus paste with melon seeds, divide into 20g perportion, shape round.
2.Mix icing sugar and margarine until light and fluffy, then add in lime juice, milk and vanilla essence.
Mix well.
3. Add in sifted flour ingredients and kanead into dough, then apportion into 10g each.
4.Wrap each dough with 1 portion of lotus paste, put into mould, press down and dislodge.
5.Bake in pre-heat oven at 180 degree celecius for 10 mins, take out, let cool down, glaze with milk and then bake for another 10
minutes until golden brown.

奶油月饼

可做大约20个小叮当

材料:
面粉90g,吉士粉25g(一起筛过)
糖粉35g
菜油50g
奶水25ml
酸甘汁1小匙

馅料:
莲蓉馅400g
瓜子仁10g(烤香)

1.将莲蓉馅加瓜仁混均,分成每份20g,搓圆
2.将糖粉和菜油搅拌均匀,加酸甘汁和奶水。
3.最后加入粉料搓成粉团,然后分成每粒10g
4.用一份皮料包入一份莲蓉馅,压入模型。
5.入烘炉180度10分钟,取出待冷。涂上奶水,再烘10分钟至金黄色。

刚烘出来的皮很香脆口感就好像要吃饼干,第二天皮就不脆了,比较软了。
