The special things about this mooncake is, it is like a chocolate with nut inside, so when somewhen eat it, they will surprise to eat the nut. Isn’t it fun?
Can make approx. 17 mickey mouse nutty mooncake
Mooncake Skin:
180g Low Protein Flour
80g Icing sugar,
1 tsp baking powder
1tbsp milk powder, dash of salt
40g butter/margarine, softened
40g maltose
30g fresh milk
Filling:
300g Lotus seed paste
some toasted almonds or cashewnuts
For Glazing:
2tbshp fresh milk, mixed with 1tbsp water
Method:
1. Sift low protein flour, icing sugar and baking powder together.
2. Mix all ingredients for skin into a soft dough.
3. Divide dough into 17 portions (about 20g each)
4. Divide filling into 17 portions (about 18g each)
l the weight of dough and filling is for the mickey mouse cookies mould, if you use other cookies mould, you need to adjust yourself
5. Wrap the fillings with 1 almond,then roll skin into thin round and wrap up filling.
6. Put the wrapped dough and put in the mould like the picture and stamp it with mickey mouse stamper.
7. Bake in a preheated oven at 180 degree celcius for about 10 minutes or until golden brown. Remove and glaze with milk.

Actually this mould comes with Mickey and Minnie, unfortunately my daughter always play around with my mould and I couldn’t find the minnie mould, therefore you only see the mickey mouse mooncake here.
