Mochi Mickey Mooncake 麻署米奇月饼

I am not a professional so the moon cake did not look as nice as those selling outside, this is my first time to make this mochi and first time using this mickey mould,hope you all like it.  Since mooncake festival is coming soon, therefore the moulds are selling fast, so grab your mould as soon as possible before it has gone.  Beside mickey silicon mould, you can also do it with hello kitty silicon mould, pooh silicon mould

This recipe can make 12 mickey mouse shaped mochi mooncake

Mochi Filling

200g rice glutinous flour

150g water

20g castor sugar

40g butter

300g lotus paste, mixed with 25g toasted melon seeds

Skin:

175g golden syrup

50g peanut cooking oil

5g alkaline water

200g low protein flour, sifted

some glutinous rice flour, for kneading the dough

1 egg, beaten, for glazing

Method:

1. Mochi Filling:

Mix water and glutinous rice flour and divided into 5 portions. Roll into thin sheet and put into boiling water to cook until it can float up. Put into a mixing bowl and beat into a smooth dough.

Slowly add sugar and butter in batches and beat till smooth dough is formed again.

Divide into 12 portions and form into a ball (each portion 15g) (if it is very sticky while you try to divide, wait till it is cool down)

Divide lotus paste into 12 portions 25g each, wrap up mochi ball and leave aside.

2. Skin:

Combine all ingredients to form a dough. Cover with a wet cloth and rest for 30 minutes. Divide the dough into 12 portions each 30g.

3. Roll skin into thin rounds, wrap up the filling and form into small ball. Put some glutinous rice flour on your hand and on the dough, press into a mickey mouse silicon mould and take it out. Place on baking tray. Brush away excess flour and then brush with water. Bake in pre-heated oven at 210 degree celcius for 10 minutes until lightly brown. Remove and leave to cool for 15 minutes and glaze with beaten egg. Return to oven and bake for another 10 minutes till golden brown.
